Ingredients: 1kg baby potatoes (see note); 2 tbsp olive oil; ½ tbsp butter; 1 small leek (sliced and washed thoroughly); 150g mushrooms (sliced); Salt and pepper to taste; 2 tsp plain flour; 1 cup milk; 1 tbsp parsley, dill or chives (optional) (chopped); 3-400g baked beans; ½ cup cheddar cheese (grated); ½ cup sour cream, or plain, natural or Greek yoghurt; 1-2 spring onions (sliced)
