Ingredients: 700g pork loin (diced); 40g lemongrass (see note); 2 tbsp peanut oil; 1 tbsp lime juice; 1 tbsp fish sauce; 1 tbsp soy sauce; 2 cloves garlic (minced); 1 tsp sriracha; 1 tsp brown sugar; 1 cup Basmati rice; 2-4 spring onions (cut into thin rounds); 120g baby spinach (roughly chopped); 30g coriander (finely chopped); ½ bunch chives (finely chopped); 2 avocados (diced); 425g tinned pineapple pieces (finely diced, reserve juice); 8-12 tortillas; 1 small red chilli (optional) (finely diced); 150ml Tonkatsu sauce (see note) (optional)
