Ingredients: 1-1.5 sheets defrosted shortcrust pastry; 1 tbsp olive oil; 1 onion (diced); 2 cloves garlic (minced); 250g leftover roast pumpkin; 100g feta (crumbled); 60g baby spinach leaves; 5 eggs (lightly beaten); 250mls milk; 250mls cream; Salt/pepper; ¼ cup cheddar (grated)
