Ingredients: 250g pumpkin (cut into 2cm cubes); 1 bulb fennel (sliced into wedges); 4 tbsp olive oil; ¼ red capsicum (diced); ¼ zucchini (diced); ½ red onion (cut into chunks); 125g giant or pearl couscous (see note); 1 cup vegetable or chicken stock; 1 orange (diced); 20g pistachios (sliced); Fennel fronds to garnish (optional); ½ orange (juice only); Squeeze of lemon juice; 2 tbsp olive oil; 2 tbsp pomegranate molasses (see note); Salt and pepper to taste
