Name: Crispy tofu on rice with bok choy
Ingredients: 500g classic or firm tofu (cut into cubes); 6 tbsp cornflour; Pinch of salt and pepper; 2-3 tbsp olive oil; 1 tbsp olive or peanut oil; 2 cloves garlic (minced); ½ tsp ginger (minced); 3 tbsp soy sauce; 3 tbsp honey; 2 tbsp sesame oil; 1.5 cups jasmine rice (uncooked); 1 bunch bok choy (separated and washed thoroughly); 1 tsp sesame oil; 3 tbsp sesame seeds (toasted); ¼ cup spring onion (chopped); 1 sprig coriander (optional) (chopped); Chilli oil to serve (optional)
