Ingredients: 2 tbsp olive oil or butter; 1 leek, sliced or 1 brown onion, diced; 1 clove garlic (minced); 1 ½ cups Arborio rice (see notes); 1L stock; ½ cup parmesan cheese (grated ); Olive oil (to cook); 500 g chicken thighs (diced ); 250 g bacon (diced); 2 cups mushrooms (sliced); 1 cup frozen peas; 2 tbsp fresh thyme or 2 tsp dried; Salt and pepper (to taste )
